Summer break is here and the kids are roaring with enthusiasm for what's to come. During one of our "Whine Down Wednesday" treat sessions, the three of us whipped up these Rainbow Krispie Ice Cream bites. They are a delightful twist on an all time favorite.
2C Rice Krispies
2C Fruity Rainbow Pebbles
1pkg Mini Marshmallows or Marshmallow Fluff
1 half gallon of your favorite vanilla ice cream
Round Cookie Cutter
Parchment Paper
Rolling Pin
Ice Cream Scoop
In a large bowl, combine the Rice Krispies and Fruity Rainbow Pebbles.
Melt the mini marshmallows in a pot over medium heat until smooth.
Mix in the melted marshmallows and the combined cereals. Once mixed throughout, pour the sticky mixture onto parchment paper. Lightly spray oil onto a rolling pin and continue to roll the sticky cereal mixture until flat.
Cut out circles with the cookie cutter, set aside and let cool.
With a small ice cream scoop, place one scoop in the middle of the cereal circle and top with another to create a sandwich bite. Place in a freezer to set for thirty minutes and enjoy.
Makes 12 Bites (depending on the size of your cookie cutter)
*while I used a circular cookie cutter, any shape will do and will make you exponentially more fun than me.
