In the week following celebratory barbecues we desperately needed to lightened up. Low and behold strawberry season is in full swing. In my Summer Solstice Strawberry Salad, they reign supreme. Coupled with mozzarella pearls, cucumber, grape tomatoes and quinoa.....surprise🎉 Quinoa, the nutritiously rich super grain, makes a surprise appearance. As an excellent source of manganese, quinoa adds a nice heft to the salad. These sumptuous summer ingredients work in chorus to give you a full belly, while staying light, nutritious and fresh.
{for the salad} 1/3 C Strawberries, halved 1/3 C Mozzarella Pearls, halved 1/3 C Grape Tomatoes, halved 1/2 Cucumber, diced 1/4 C Quinoa, cooked 1 Tbsp Basil Pesto After the prep, mix all ingredients in a bowl. Toss with pesto in lieu of dressing. If pesto isn't your jam, replace with your favorite dressing and rejoice.
