Mediterranean Cauliflower Rice


I am often drawn to the aromas and textures found in Mediterranean cuisines. The flavors are clean and fresh. The dishes are draped with simplicity, yet bold in it's presentation. In my Mediterranean Cauliflower Rice, there is a strong Greek influence. Cauliflower rice is so versatile- the possibilities are endless. This latest version proves it. 1 Head of Cauliflower, riced 2 Tbsp Olive Oil 2 Tbsp Dried Oregano 2 Tbsp Dried Parsley 1 Tbsp Garlic Powder 1 Tbsp Capers, drained 1C of the trinity (onion, bell pepper, and celery) 2 Zucchini, diced 2 Yellow 2 Squash, diced 1C Olives, Kalamata and Green, sliced Mint, julienned, to taste

After the initial "ricing" of the cauliflower head, heat two tablespoons of olive oil in a pot. Over medium heat, sauté the cauliflower rice until slightly colored, about 5-7 minutes. Set aside. In the meantime, prep all the remaining vegetables (the trinity, zucchini, yellow squash and olives). Make special efforts to cut all of the veggies to be uniform in their dimensions.

In the same pot that previously sautéed cauliflower rice, add the trinity. Saute until translucent. Add ​​the zucchini and yellow squash. Add the dried seasonings as well (oregano, parsley and garlic powder). Allow to cook for 3-5 minutes, or until the squash has softened. Add the cauliflower rice, olives, and capers. Cook for an additional 3 minutes, stirring to incorporate. Finish with a squeeze of fresh lemon juice and fresh julienned mint. Serve immediately.

Notes* You may have noticed that I did not use any salt in this recipe. This was done purposefully, as the capers and olives have lots of sodium alone. I relied on the flavors of the fresh herbs and elements for flavor. However, if you are finding your pallets in need of more, please add salt to taste. I've eaten this solo dolo, with a simple compliment of a lemon dill yogurt. I've also topped this with crumbles of feta cheese. My totally delish "Chicken Shawarma Delight" (insert future post anticipation) is also a lovely accompaniment to this meal. Enjoy as you please.
