Summer Corn's Last Hurrah


Well, summer is coming to an end. And it has been a stellar one indeed. The corn crops have been bountiful this season. Brightly hued ears have graced our tables with the sweetest of kernels. Before we officially close summer's curtains be sure to go and grab a few for this gorgeous recipe.

4 Corn Ears, shucked

1 Bunch Cilantro, finely chopped

1 Lime

1 Tbsp Butter

Salt

Pepper

1 Tsp Tajin Seasoning

1/4 C Yogurt

1 Tbsp Light Mayonnaise

After the corn has been prepared and the kernels shucked, sauté in a tablespoon of melted butter. Once the kernels are heated throughout, transfer to a bowl. Add the salt and pepper (to taste), Tajin, yogurt and mayonnaise. Stir to incorporate.

Add the cilantro and sprinkle with lime juice. Stir to incorporate. Taste and adjust the seasoning as needed.

*This is the magic dust that brings it all together. You can find it at your local grocer around the fruit or possibly in the international aisle. Enjoy!
