This is everything. Protein and vegetables galore. An entire meal in one cute turkey breast. 4 Turkey Breasts 1 Onion, finely chopped 1 handful of Sun Dried Tomatoes, julienned 4 Garlic cloves, minced 1/4 C evaporated milk 1/2 lb Frozen Spinach 2 Tbsp Cajun Seasoning 1 Tbsp Garlic Powder
1 Tbsp Oil (of your choice) Salt to taste Pinch of Nutmeg
To prepare the turkey breast…..place the breast parallel to the cutting board. With a small filet knife, cut a small incision, horizontally, in the middle of the breast to create a pocket. Leave the edges of the turkey breast intact. Season the breast liberally with the cajun seasoning and grill until 75% cooked. Remove from the heat.
To prepare the stuffing…..sauté the finely chopped onions in one tbsp of oil until translucent. Add the minced garlic and sun dried tomatoes and sauté for a few minutes until fragrant. Add the spinach and heat throughout. Season with salt to taste, garlic powder, pinch of nutmeg and add in the evaporated milk.
Reduce the heat and simmer until the liquid has reduced. Taste periodically and adjust seasoning
as needed.
To assemble….preheat the oven to 375*. Take the partially cooked turkey breast and insert he stuffing into the pocket. Place into a shallow baking dish with a small amount of liquid at the bottom (to prevent sticking). Cover and bake for 10-12 minutes.
