Thai Basil

Thai food is so comforting. The flavor profiles presented in a number of the recipes are bodacious. This recipe is no different. I prepared this recipe with ground turkey, beef and a meat substitute.; all of them, satisfying and easy. 1 lb. Ground Turkey, Beef or Meat Substitute 1 Shallot, finely chopped 1 Red Bell Pepper, julienned 1 C Thai Basil 5 Garlic Cloves, thinly sliced 1 Tbsp Fish Sauce 3 Tbsp Dark Soy Sauce 3 Tbsp Sweet Soy Sauce 1 Tsp Brown Sugar 1 Tsp Cornstarch Cilantro, finely chopped for garnish Lime Wedges

Over medium heat, brown the ground turkey. Once browned, set aside. In the same pot, sauté shallots until translucent. Add the sliced garlic and sauté until aromatic.

Add the bell peppers and sauté until wilted. Add the fish sauce, brown sugar and soy sauces to complete the sauce. Return the previously browned ground turkey to the pot and cornstarch. Bring to a boil and lower to a simmer. Simmer for an additional 7-10 minutes over low to medium heat. Towards he end of the simmer, add the fresh basil. Garnish with fresh cilantro and serve over rice or cauliflower rice. Enjoy.

*Thai basil is available in some groceries and specialty markets. Regular basil is a suitable substitute
