How do you like your broccoli? Steamed? Boiled? Covered in cheese? If you haven’t ventured into roasting them yet, you haven’t truly lived. This cruciferous gem shines in many ways. A member of the cabbage family, Broccoli is an excellent source of vitamins C and K, providing more than 20% of your daily value per serving. This version is flavorful and doesn’t deplete the nutritional values by over cooking.

1-2 Broccoli heads, cut into florets 2 Tbsp Olive Oil 1 Lemon, juiced 3-4 Garlic Cloves, sliced thinly Salt, Pepper and Garlic Powder to taste

Preheat oven to 425*. In a bowl, toss the broccoli florets with the oil, lemon juice, garlic and seasonings. Spread the broccoli on a parchment papered baking sheet and bake for 15-20 minuets. Or until the broccoli has lightly browned on the tips. Serve immediately. *You could splash with balsamic vinegar, sprinkle lightly with parmesan or even slivered almonds.
