Curry Dusted Cauliflower

I mean, because curry... Seriously, what dish does curry NOT make a thousand times better? This is a simple cauliflower roast that has been elevated to greatest with the simple presence of curry. 1 Cauliflower, cut into florets 2 Tbsp Olive Oil 2 Tbsp Curry Powder 1 Tbsp Garlic Powder 1 Tbsp Cumin 1 Tsp Lemon Zest

Lemon Juice Salt and Pepper to taste Cilantro Preheat the oven to 425*.

Cut the head of the cauliflower into florets and set aside. In a bowl, mix the olive oil, curry and garlic powders, cumin, lemon zest and juice. Whisk to incorporate. Season with salt and pepper to taste. Combine the curry seasoned oil and the cauliflower florets.

On a baking sheet, spread the seasoned florets and place in the preheated oven. Roast for 20-25 minutes; the tips slightly browned. Remove and plate in a platter. Sprinkle with freshly chopped cilantro and serve immediately. Enjoy.
