Biggity Bacon Jam


Bacon is my JAM. Naturally, Bacon Jam is a gift that keeps on giving. It has a militia use of uses and is very easy to make; even easier to consume.

1lb Applewood Smoked Bacon, finely chopped 1 Onion, finely chopped 3/4 C Brown Sugar 3/4 C Apple Cider Vinegar 1/4 C Maple Syrup 1/3 C Creole Mustard ( or another grainy mustard)

In a skillet, cook the finely chopped bacon for 4-5 minutes. When slightly golden, add the chopped onion and cook until wilted.

Add the vinegar, brown sugar, maple syrup and mustard. Stir to incorporate. On low heat, simmer the mixture for 30-45 minutes. The mixture will concentrate and thicken.

Serve on your best burger or my favorite way; with greens. I served as the perfect accompaniment to a pot of garlicky greens. With this bacon jam, a little goes a long way. A teaspoon swirled into a bowl of greens, with cornbread, made for a very good meal. Enjoy!
