Crab Tower

Listen….there are a few things that garner immediate excitement from me. The Muppets, clothes in my size AND on sale, dumplings and a good food tower! It is small but grand and brimming with flavor combinations that will make your taste buds’ day. This crab tower is one of those restaurant treasures that you can easily have at home. Treat Yo Self!

1 pkg Imitation Crab (leg), shredded

1 C Sushi Rice

2 Tbsp Mayonnaise

1 Tbsp Rice Vinegar

Avocado, sliced and diced

Sriracha (to taste)

Cucumber, shredded

Mango, diced

1 Hollow Can, prepped with cooking spray

Aji Nori Furikake, optional garnish

Pickled Ginger, optional accompaniment

Soy Sauce, optional accompaniment

Prep + Assembly

So Easy!! In a bowl, mix the mayonnaise sriracha and rice vinegar, stirring them to incorporate. Combine the shredded crab with the mayo mixture. On a plate, in a hollow can, stack the following; pushing each layer down

Rice

Crab

Cucumber

Mango

Avocado

Here’s the fun part. Slowly and gently slide the can upward; carefully keeping the stack entact.

Top with a sprinkle of Nori and serve immediately. Enjoy!

*Aji Nori Furikake is a seasoning blend of roasted sesame and seaweed. I had the luck of finding it in my local market’s “international” aisle, however, if you feel so compelled, you can find it here. It works on a number of dishes including Chow Mien and Ramen. I’ve even used it on a Jammy Egg with avocado, rice and soy sauce. Perfect addition to your pantry.
